Monitoring the temperature of chocolate during the preparing process is extremely important. Various points of the process require an accurate heat measurement, in particular, the final process of tempering.
When it chocolate reaches 55C-58C (131F-136F) you get a bittersweet/ dark, or 45C- 50C (113F-122F) for milk or white.
